Turkey Meatballs

Now that my 10-month old daughter Elle is eating solid foods, I’ve been introducing her to a variety of meats. She has four little teeth and she loves to eat chicken and turkey, well-cooked and chopped into small pieces.

Elle is getting very dependent and wants to pick up her own food, inspect her food, and lastly, feed herself said inspected food. Oh, and for every other bite, she loves to share with the dog. One of her favorite snacks are my vegetable Zucchini Carrot Bites, so it was only a matter of time before those would be replaced by another easy snack that she could pick up, inspect and feed herself. Hence, these turkey meatballs!

This is an incredibly easy recipe. Start by putting everything in a bowl, blend it together, incorporating all the ingredients, and roll them into small, quarter-size balls. Using a skillet, over a medium high flame, add 4 tablespoons of olive oil and cook the meatballs until golden brown, approximately 8-10 minutes.

Depending on the age of your little one, you can cut the meatballs in small bites or if they’re older, serve them as is. And if your little one is like Elle, you will be amused by how they will pick up their food, inspect it, eat it, and then smile with enjoyment.

Turkey Meatballs

Ingredients

  • 1 package ground turkey meat
  • 1 cup kale
  • 1/4 cup parmesan cheese
  • 1 egg white
  • 1/4 cup bread crumbs
  • 1/4 cup diced tomatoes
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Mix all ingredients in a bowl.
  2. Roll into quarter-sized balls.
  3. In a sauté pan, add 4 tablespoons of olive oil and heat over medium flame. Add the meat balls.
  4. Cook until golden brown, about 8-10 minutes.
  5. Let them cool and feed to your little ones!

Enjoy! They also make a great snack for you, mom! :)
