Fennel, Peach, and Pea Puree

Fennel is a crunchy and slightly sweet vegetable in the same category as a parsley and carrot. Although I tend to think of it more like a sweet onion that I love to sauté in a dish. This is also the season when it’s at it’s best (available from autumn to spring).

To some, fennel is used in soups or stocks. So you might be wondering how adding it to a peach and pea puree might taste? Well, this healthy dish will surprise you by how sweet and flavorful it is to your taste buds. Therefore not only will your little one gobble it up, but you’ll eat it just as quickly too.

Also, hands up to those who actually have these ingredients in their house. Rarely do I. But this week I had a slew of random veggies and fruits. So before my peaches went bad I added them in with the fennel. Also, hands up if your baby actually like peas. Not mine. So it is my mission to keep reintroducing those peas. So this looks like an interesting puree to add them in.

Fennel, Peach, and Pea Puree Recipe

Ingredients

  • 2 tbs. olive oil
  • 1 cup of fennel
  • 1/2 cup peaches (sliced)
  • 1/4 cup peas

Instructions

  1. In a sauté pan add the olive oil.
  2. Cut the fennel bulb in half and then make slices.
  3. Add the fennel slices on medium-high heat and sauté. 2-3 minutes.
  4. Add the peach slices and peas. Sauté for 2-3 minutes.
  5. Add the mixture into the Baby Bullet, and blend till smooth.
  6. Add 1-2 tbs of water to the bullet for a smoother consistency.
