Babies, toddlers, and adults – we all love pasta! My little one can put down an entire box of macaroni and cheese at dinner. And honestly, mac and cheese is a guilty pleasure of mine. Instead of sneaking bites from my daughter’s favorite dish, I thought I’d make a new pasta dish that we could both enjoy together. Green Goddess is just a creamy dressing that pairs great on salads as well as cold pasta salads I added cashews to the recipe to give it a light crunch. I soaked my cashews so they would be soft, but you can toast them in the oven for 1-2 minutes on broil. It gives the Green Goddess dressing a nice nutty taste. Have fun spreading this on everything!
Green Goddess Pasta PureeRecipe
Ingredient
- 1 cup pasta
- 1 cup basil leaves, packed
- ½ cup parsley, packed
- ½ avocado
- ¼ cup olive oil
- Juice from 1 lemon
- 1 garlic cloves (optional)
- 2 tablespoons sour cream
Instructions
- Cook the pasta till tender.
- Place all the pesto ingredients in your Baby Bullet except the sour cream, and blend on high until smooth.
- Stir the sour cream in the green goddess mixture.
- Taste and salt as needed.
- Mix together the green goddess and the pasta.
