My toddler loves this sweet corn quiche for breakfast, lunch or dinner. For a busy mom, it is one of my favorite dishes to whip up, because it only requires a few ingredients and very little time. Find a pre-made pastry shell and frozen corn at the grocery store to cut down even more time. I found one made without shortening or lard at my local grocery store. I like to keep the ingredients of this quiche simple, but I can think of many ways you can add to it!

Sweet Corn Quiche
Ingredients
- 1 pastry shell, uncooked
- 1 cup half-and-half
- 3 eggs
- 2 cups sweet corn (thawed if previously frozen)
- 1 tbsp butter, melted
- 1/2 onion, chopped
- 1 tbsp all-purpose flour
- 2 tsp sugar
- 1/2 tsp salt
- 1/4 cup shredded Swiss/Gruyere cheese

Instructions
- Preheat oven to 375 degrees F.
- Bake the pastry shell for 5 minutes, then remove.
- Add all ingredients except cheese to a Baby Bullet pitcher and blend until smooth.
- Pour over the pastry shell and top with cheese.
- Bake for 35 minutes until firm and golden brown.
