Spinach, Chickpea, and Apple Puree

Now that I’m a mom to a 21-month-old, things have changed. Bed time is sooner, my husband and I have to watch what we say, and date night begins around 4 p.m. Most of our dinner parties happen at friends’ houses, and the majority of our friends also have kids and/or newborn babies. When we walk through the door, we’re always greeted with little friends for Elle to play with, and I get excited knowing that actual adult conversation is about to happen (*insert sound of my giddiness!*)

As we all sit back, catching up with a glass of wine, I love hearing the loud giggles coming from the other room. This makes me incredibly happy and, although our adult conversations always somehow come back around to our kids, I wouldn’t change a thing. We swap baby war stories and share tips, all while sneaking peeks at our kiddos playing in the other room. Watching my Elle make friends and seeing how she handles herself around others is the next chapter and it always makes me swell up with pride.

One of my mommy friends has a six-month-old and she is about to start trying new purees. Needless to say, she came to the right person! I gave her this recipes to try — it’s packed with vitamins and the sweetness from the apples is sure to be a winner.

Spinach, Chickpea, and Apple Puree

Ingredients

  • 1/2 cup spinach
  • 1/3 cup cooked chickpeas
  • 1/2 organic apple

Directions

  1. Wash and peel the apple. Remove seeds. Cut into cubes.
  2. Add all ingredients to your Baby Bullet and blend until smooth.
