Under the Weather Miso Soup

With our preschooler starting back at school we knew we were due for a cold. It’s been passed around among the four of us at home and now I have it. I’ve had a few sleepless nights with boys coughing and climbing all over me. Moms need to take care of ourselves, right?

This soup is soothing and simple to make. If you have miso paste in your refrigerator then you’re in luck. I also just happened to pick up fresh ginger last week (which I rarely have on hand) but you could substitute powder too.

A note beforehand: If you don’t like a lot of salt I would suggest using water only because the miso is salty on its own without the additional stock.

Ingredients
  • 2 quarts stock or filtered water
  • 2 bulbs garlic, peeled
  • 1 bay leaf
  • 4 Tbsp. miso or barley miso
  • 1 tsp. finely grated ginger (for my cold I could’ve added more)
  • Whole grain bread, toasted and cut into cubes
  • Green onion for garnish

 

Instructions
  1. Bring the stock and/or water, garlic, and bay leaf to a boil. Simmer 15 minutes, or until garlic is soft. Remove the bay leaf.
  2. Mix the miso, ginger, and garlic with stock in blender
  3. Add the mixture to the pot and heat just below boiling. Place the toast cubes at bottom of each bowl and ladle hot soup over them. Garnish with green onion. The ginger and garlic do wonders for a cold.

Serves 6-8
